The Graf von Schönborn fish farm is located in the heart of the Aischgrund in the area of northern Bavaria. It covers a total area of approximately 88 hectares and comprise 50 single ponds with sizes of 3.000 m² to more than 12 hectares. Frequently arranged in groups or chains, the ponds shape the landscape of the Aischgrund. The ponds are mainly used to breed carps and are currently rented. The Aischgrund carp is an internationally famous specialty and is served, mainly au bleu or fried, in many village restaurants during the so-called “r”-months (months ending in “r”)
 
Carps are easily satisfied and adaptable fish which preferably live on water organisms. Carps can exist at temperatures between one and 32 degrees, although a temperature of approximately 24 degrees is necessary for an optimal growth. The secret of success of the cultivation of carp ponds in the Aischgrund are the advantageous climatic conditions and the nature-orientated breeding. For this reasons, the carps do not obtain their marketable weight of two to three pounds before the third summer. Of course, the carps which are exclusively feed with nourishment from their natural environment taste best. On principle the quality also remains the same when grain, especially wheat, is fed in addition.
